Chewy Salted Caramel and Lemon Coconut Protein Bites

Chewy Salted Caramel Protein Bites

What you'll need

Salted Caramel Centre

  • 12 dates 
  • 3 tbsp almond butter
  • ½ tsp ground cardamon
  • 2ml sea salt (pinch)
  • 2 tbsp vanilla whey protein - B.Nourished

Chocolate Crumb Coating

  • 240g almond nuts
  • 3 tbsp honey
  • 1 tbsp coconut oil
  • 2 tbsp cocoa powder
  • 2 tbsp chocolate whey protein - B.Nourished

 

Let's get started

  1. Blend all the salted caramel ingredients together in a food processor until smooth.
  2. Roll into small balls (approximately 1cm in diameter) and place in the freezer for 30 minutes to set.
  3. Blend all the chocolate crumb ingredients together in a food processor until the mixture binds. Add more coconut oil if the mixture remains crumbly.
  4. Take a small amount of mix in your hand, and gently mold over the top of the frozen caramel balls to cover the entire surface.
  5. Roll in your hands until even and smooth.

Place in the fridge for approximately 30 minutes to set ... Enjoy!

Lemon Coconut Protein Bites

What you'll need

  • 2 cups almond meal
  • 1½ cups desiccated coconut (unsweetened)
  • 1 large lemon
  • 4 tbsp honey
  • 3 tbsp coconut oil
  • ½ tbsp vanilla bean paste
  • 2ml sea salt (pinch)
  • 3 tbsp poppy seed
  • 2 tbsp vanilla whey protein - B.Nourished 

 

Let's get started

  1. Zest and juice the whole lemon.
  2. Combine all the ingredients, together with the lemon juice and zest, mix until the mixture forms a dough – you can also blend in food processor for 1-2 minutes.
  3. Roll the mixture with your hands into small bite-sized balls.
  4. In a separate bowl, add the extra desiccated coconut and roll the balls in the coconut until well coated.
  5. Lastly, top off each protein bite with a sprinkle of poppy seeds. 

Place in the fridge for approximately 30 minutes to set ... Enjoy!
